Remember Me?



I used to blog around here, back in the good ‘ole days. Well, the days are still good, just much busier. Classes started, and with them went my free time. With each passing day, it became easier and easier not to update. Days turned into weeks, and weeks turned into nearly an entire month. And I apologize for that.

I’m sorry. Please by my blog friends again 🙂

So, while I’ve been away from y’all, I did manage to take a few shots. I made some Flaxseed-Blueberry muffin tops, which were really great as a grab and  go sprint snack.


The flaxseeds on top browned in the oven, and when they came out were little crunchy compliments.

I tried baked oatmeal for the first time, and I was pretty dissappointed with what came out. Even after nearly an hour, it didn’t firm up, the edges didn’t crisp, and it came out a soggy oatmeal blob. But a tasty, soggy oatmeal blob, nevertheless!

I probably had this about five … or fourteen… times.











I went to Northern Italy to celebrate my sister’s birthday, and on the drive home I picked up a Country Living. I couldn’t believe the kiosk had it, I nearly had a heart attack. Yes, over a magazine. So sue me. Anyway, in it was a wonderful looking recipe from a bakery in Manhattan – Cornmeal Blueberry Muffins. I cut the butter in half, halved the sugar and replaced the half with Splenda, and used thick cut cornmeal.


The result was a hybrid between a grainy cornbread muffin and a blueberry muffin. They were gone the next day. I made 32.


Looking at these photos, I may just make another batch today …

    Oh my goodness, I have been craving cornbread blueberry muffins, but had not found a good recipe yet. I will having to go look for that magazine. They look delicious. Love your banana picture. Glad your back!

    Oooh, the Flaxseed-Blueberry muffin tops, Banana with Almond-Butter, and the Cornmeal-Blueberry Muffins look incredible; as does that oatmeal (sorry it didn’t turn out as good as you hoped it would have, though 😦 ).
